Fried Asam Prawns (Asam Heh/Udang Goreng Asam)
Ingredients
8 to 10 Large Prawns, trimmed
2 Tbsp Tamarind Paste
1 Tbsp Sugar
1 tsp Dark Soy Sauce
3 Tbsp Peanut Oil, for frying
Method
Combine all the ingredients, except the oil, and marinate the prawns for an hour.
Heat the oil in a frying pan over high heat. Fry the prawns in a single layer. Turn other prawns over a few times and make to they cook evenly. Pan-fry the prawns until dark brown in color and crisp. Remove from the heat and serve immediately.
